English Matrimonial Bar Cookies

3/4 Cup Maury Island Farm brand Red Raspberry Jam
3/4 Cup butter
1 Cup brown sugar
1 1/4 Cups Flour
Pinch Salt
1 1/4 Cup rolled oats

  1. Pre-heat oven to 325o F.
  2. Cream butter and brown sugar. Add flour and salt; mix.
  3. Then add rolled oats, and combine.
  4. Spread 2/3 of this mixture in a 9x12 pan, firmly pressing down with fingers. Spread 3/4 cup Maury Island Farm brand Red Raspberry Jam over the top, but not touching pan sides. Sprinkle the remainder of dry mix over the top.
  5. Bake 35-40 minutes. Cut into bars while warm, and enjoy!
